These Buffalo Chicken Dip Egg Rolls combine a spicy, creamy filling wrapped in a crispy shell, making them a perfect party snack or family meal.

- 2 cups shredded chicken
- 8 oz cream cheese, softened
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/4 cup scallions, chopped
- 10 egg roll wrappers
- Oil for frying
Instructions
- Prepare the Filling: In a bowl, combine shredded chicken, softened cream cheese, buffalo sauce, shredded cheddar, and chopped scallions. Mix until thoroughly blended. Taste and adjust seasoning, if needed.
- Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface with a corner facing you. Spoon about 2 tablespoons of the filling onto the bottom half. Fold the corner over the filling, tuck in the sides and roll upward to seal. Use a little water to help seal the edges.
- Heat the Oil: In a deep skillet or pot, add about an inch of oil and heat it to 350°F (175°C).
- Fry the Egg Rolls: Carefully place a few egg rolls in the hot oil, cooking about 3-4 minutes per side until golden brown. Make sure not to overcrowd the pan.
- Drain and Serve: Remove the egg rolls and place them on a paper towel to drain excess oil. Serve warm with ranch or blue cheese dressing for dipping.
- Store: If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days.
Notes
For a healthier option, you can bake the egg rolls at 400°F (200°C) for about 15-20 minutes, flipping them halfway through for that golden crunch.
