Ingredients

- Large pasta shells
- Fresh burrata cheese
- 3 cloves garlic, minced
- 1 cup cremini mushrooms, sliced
- 1 cup shiitake mushrooms, sliced
- 2 tablespoons olive oil or butter
- Fresh basil or parsley, chopped
- Salt, to taste
- Pepper, to taste
- 1 cup tomato sauce (optional)
Instructions
- Boil a large pot of salted water and cook the pasta shells until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant. Then, add sliced mushrooms and cook until golden brown. Season with salt and pepper.
- Fill each pasta shell with a generous spoonful of burrata cheese.
- In a baking dish, spread a thin layer of tomato sauce (if using), then arrange filled shells on top. Top with sautéed mushrooms and any remaining burrata.
- Preheat the oven to 375°F (190°C) and bake for about 20 minutes or until heated through and golden on top.
- Remove from the oven and garnish with fresh herbs before serving.
Notes
For a vegetarian twist, substitute mushrooms with spinach or zucchini. Use gluten-free pasta shells if needed.
