A comforting and delicious bake that combines the sweetness of butternut squash and tart apples, spiced with cinnamon and nutmeg.

- 1 medium Butternut Squash, peeled and diced
- 3 medium Fresh Apples (Granny Smith or Honeycrisp), cored and sliced
- 2 tablespoons Butter, melted
- 1/4 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1/2 teaspoon Nutmeg
- Fresh Herbs (Sage or Thyme), chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the butternut squash and apples by peeling, dicing, and slicing them as needed.
- Mix the butternut squash and apple slices in a large bowl with melted butter, brown sugar, cinnamon, nutmeg, and chopped herbs.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Bake covered with aluminum foil for the first half of the baking time, then remove the foil for the last 15-20 minutes. Bake for about 45-50 minutes.
- Serve slightly cooled, best enjoyed warm.
Notes
For extra flavor, consider roasting the butternut squash separately before mixing with apples. Topping with oats or nuts can add a delightful crunch.
