Cajun Black Bean Chicken Burritos

Description

A delicious fusion of Cajun flavors and traditional burritos, filled with chicken, black beans, and vibrant veggies.


Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 can black beans (or 1 cup dried, soaked overnight)
  • 2 tbsp Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup corn
  • 4 flour tortillas
  • Fresh cilantro, for garnish
  • Juice of 1 lime

Instructions

  1. Marinate the chicken with Cajun seasoning and set aside.
  2. Heat a skillet over medium heat with a splash of oil. Sauté diced onions and peppers until softened, about 5 minutes.
  3. Push the veggies to one side, add the marinated chicken, and cook until golden and cooked through, about 7-10 minutes.
  4. Shred the chicken with two forks while in the pan.
  5. Stir in black beans, corn, and lime juice, cooking for another 2-3 minutes.
  6. Lay out tortillas and scoop ⅓ cup of the chicken mixture onto each, topping with fresh cilantro. Roll and tuck in the sides.
  7. Optionally, grill the burritos on a skillet until golden and crispy.

Notes

For a vegetarian version, substitute chicken with sautéed mushrooms or extra veggies. Can also use lettuce wraps instead of tortillas.
