Description
A delicious fusion of Cajun flavors and traditional burritos, filled with chicken, black beans, and vibrant veggies.
Ingredients

- 1 lb boneless chicken (breast or thighs)
- 1 can black beans (or 1 cup dried, soaked overnight)
- 2 tbsp Cajun seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup corn
- 4 flour tortillas
- Fresh cilantro, for garnish
- Juice of 1 lime
Instructions
- Marinate the chicken with Cajun seasoning and set aside.
- Heat a skillet over medium heat with a splash of oil. Sauté diced onions and peppers until softened, about 5 minutes.
- Push the veggies to one side, add the marinated chicken, and cook until golden and cooked through, about 7-10 minutes.
- Shred the chicken with two forks while in the pan.
- Stir in black beans, corn, and lime juice, cooking for another 2-3 minutes.
- Lay out tortillas and scoop ⅓ cup of the chicken mixture onto each, topping with fresh cilantro. Roll and tuck in the sides.
- Optionally, grill the burritos on a skillet until golden and crispy.
Notes
For a vegetarian version, substitute chicken with sautéed mushrooms or extra veggies. Can also use lettuce wraps instead of tortillas.
