Description

A creamy, flavorful twist on classic mac and cheese featuring spicy Andouille sausage and Cajun seasoning.


Ingredients

  • 8 oz elbow macaroni
  • 8 oz Andouille sausage, sliced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 tbsp Cajun seasoning
  • 1/2 cup breadcrumbs (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil a pot of salted water and cook the elbow macaroni until al dente. Drain and set aside.
  2. In a large skillet, heat oil and cook the sliced Andouille sausage until browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté diced onion and minced garlic until fragrant, about 3 minutes.
  4. Whisk in flour and cook for 1-2 minutes. Gradually add milk and cream, whisking until thickened.
  5. Stir in Cajun seasoning, cheddar cheese, and Gruyère cheese until melted and creamy.
  6. Add cooked pasta and sausage to the cheese sauce, mixing well.
  7. Transfer the mixture to a greased baking dish and top with breadcrumbs if desired.
  8. Bake at 350°F (175°C) for 20-25 minutes until golden and bubbly.
  9. Garnish with fresh parsley and serve hot.

Notes

Feel free to substitute Andouille sausage with smoked kielbasa or spicy Italian sausage. Experiment with pasta shapes and cheese varieties.
