A creamy, flavorful twist on classic mac and cheese featuring spicy Andouille sausage and Cajun seasoning.

- 8 oz elbow macaroni
- 8 oz Andouille sausage, sliced
- 1 cup sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 2 cups whole milk
- 1/2 cup heavy cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 tbsp Cajun seasoning
- 1/2 cup breadcrumbs (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil a pot of salted water and cook the elbow macaroni until al dente. Drain and set aside.
- In a large skillet, heat oil and cook the sliced Andouille sausage until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté diced onion and minced garlic until fragrant, about 3 minutes.
- Whisk in flour and cook for 1-2 minutes. Gradually add milk and cream, whisking until thickened.
- Stir in Cajun seasoning, cheddar cheese, and Gruyère cheese until melted and creamy.
- Add cooked pasta and sausage to the cheese sauce, mixing well.
- Transfer the mixture to a greased baking dish and top with breadcrumbs if desired.
- Bake at 350°F (175°C) for 20-25 minutes until golden and bubbly.
- Garnish with fresh parsley and serve hot.
Notes
Feel free to substitute Andouille sausage with smoked kielbasa or spicy Italian sausage. Experiment with pasta shapes and cheese varieties.
