Description

A hearty and comforting Cajun potato soup, filled with smoky sausage, tender potatoes, and aromatic spices, perfect for chilly evenings.


Ingredients

  • 4 medium Russet or Yukon Gold potatoes, diced
  • 1 lb Andouille sausage, sliced
  • 1 cup onion, diced
  • 1 cup bell peppers, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • Fresh parsley or green onions, for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add diced onions, bell peppers, and minced garlic. Sauté until fragrant, about 3–4 minutes.
  2. Push the veggies to one side and add sliced sausage. Brown for about 5–7 minutes.
  3. Sprinkle in Cajun seasoning. Stir well and let spices mingle for a minute before adding potatoes.
  4. Pour in broth until potatoes are just covered. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes, until potatoes are fork-tender.
  5. Blend soup with an immersion blender until creamy or transfer portions to a regular blender. Return to pot and stir in heavy cream, adjusting seasoning with salt and pepper.
  6. Garnish with fresh parsley or green onions. Serve hot with crusty bread.

Notes

For a lighter version, swap cream for more broth. This soup can also be frozen; omit cream before freezing.
