A hearty and comforting Cajun potato soup, filled with smoky sausage, tender potatoes, and aromatic spices, perfect for chilly evenings.

- 4 medium Russet or Yukon Gold potatoes, diced
- 1 lb Andouille sausage, sliced
- 1 cup onion, diced
- 1 cup bell peppers, diced
- 4 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream
- Fresh parsley or green onions, for garnish
Instructions
- Heat oil in a large pot over medium heat. Add diced onions, bell peppers, and minced garlic. Sauté until fragrant, about 3–4 minutes.
- Push the veggies to one side and add sliced sausage. Brown for about 5–7 minutes.
- Sprinkle in Cajun seasoning. Stir well and let spices mingle for a minute before adding potatoes.
- Pour in broth until potatoes are just covered. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes, until potatoes are fork-tender.
- Blend soup with an immersion blender until creamy or transfer portions to a regular blender. Return to pot and stir in heavy cream, adjusting seasoning with salt and pepper.
- Garnish with fresh parsley or green onions. Serve hot with crusty bread.
Notes
For a lighter version, swap cream for more broth. This soup can also be frozen; omit cream before freezing.
