  • 4 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Fresh parsley or green onions, for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add onion, celery, and bell pepper, cooking until soft—about 5-7 minutes. Stir in garlic during the last minute.
  2. Brown the sausage: Add sausage to the pot, breaking it apart. Allow it to brown for about 5 minutes.
  3. Add the potatoes and broth: Toss in diced potatoes and pour in the broth. Bring to a boil, then reduce to a simmer.
  4. Season: Stir in Cajun seasoning, paprika, and black pepper. Simmer uncovered for 20-25 minutes, until potatoes are tender.
  5. Finish with cream: Stir in a splash of heavy cream for richness. Adjust seasoning to taste.
  6. Garnish and serve: Spoon the soup into bowls, topped with parsley or green onions. Serve hot with crusty bread.

Notes

For a lighter version, use turkey sausage or plant-based sausage. Serve with bread for dipping or a fresh salad.
