- 1 lb smoked sausage (Andouille or any smoked sausage)
- 4 large russet potatoes, diced
- 1 large onion, finely chopped
- 2 stalks celery, chopped
- 1 bell pepper, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp black pepper
- Fresh parsley or green onions, for garnish
Instructions
- Sauté the aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add onion, celery, and bell pepper, cooking until soft—about 5-7 minutes. Stir in garlic during the last minute.
- Brown the sausage: Add sausage to the pot, breaking it apart. Allow it to brown for about 5 minutes.
- Add the potatoes and broth: Toss in diced potatoes and pour in the broth. Bring to a boil, then reduce to a simmer.
- Season: Stir in Cajun seasoning, paprika, and black pepper. Simmer uncovered for 20-25 minutes, until potatoes are tender.
- Finish with cream: Stir in a splash of heavy cream for richness. Adjust seasoning to taste.
- Garnish and serve: Spoon the soup into bowls, topped with parsley or green onions. Serve hot with crusty bread.
Notes
For a lighter version, use turkey sausage or plant-based sausage. Serve with bread for dipping or a fresh salad.
