- 1 lb sausage (andouille or smoked)
- 3 cups potatoes (Russet or Yukon gold, diced)
- 1 large yellow onion (diced)
- 1 cup bell peppers (mix of green and red, diced)
- 4 cloves garlic (minced)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh green onions or parsley for garnish
Instructions
- In a large pot or Dutch oven, heat a splash of olive oil over medium heat. Add diced onions, bell peppers, and garlic. Sauté until soft and fragrant, about 5 minutes.
- Add in the sausage, stirring occasionally, and let it brown and release its oils.
- Toss in the diced potatoes and stir everything together, allowing the flavors to meld for another few minutes.
- Pour in the broth, ensuring the potatoes are fully submerged. Add the Cajun spices and stir well.
- Reduce heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until potatoes are fork-tender.
- Stir in the cream and adjust seasoning as needed. For a thicker consistency, mash a few potatoes against the sides of the pot.
- Ladle the soup into bowls, garnishing with green onions or parsley if desired. Serve hot with crusty bread or rice.
