- 4 medium Yukon Gold potatoes, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon cayenne pepper
- 2 teaspoons Cajun seasoning
- 1 teaspoon fresh thyme
- 2 tablespoons parsley, chopped
- 1 carrot, diced
- 1 celery stalk, diced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and bell pepper with a pinch of salt; cook until softened, about 5-7 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Add the diced potatoes and broth, and sprinkle with Cajun seasoning and cayenne. Bring to a boil.
- Reduce the heat and let the soup simmer for around 20 minutes until the potatoes are tender.
- Blend some of the soup using an immersion blender, leaving a few chunky pieces for texture. Stir in the cream and simmer for another 5 minutes.
- Ladle the soup into bowls, garnish with fresh herbs, and serve with crusty bread.
Notes
Let the soup sit for a few hours or overnight for a deeper flavor. Adjust spice levels based on taste.
