Description

A creamy and hearty Cajun Potato Soup that combines rich flavors with a spicy kick, perfect for family gatherings or potlucks.


Ingredients

  • 4 medium Yukon Gold potatoes, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon cayenne pepper
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon fresh thyme
  • 2 tablespoons parsley, chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and bell pepper with a pinch of salt; cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add the diced potatoes and broth, and sprinkle with Cajun seasoning and cayenne. Bring to a boil.
  4. Reduce the heat and let the soup simmer for around 20 minutes until the potatoes are tender.
  5. Blend some of the soup using an immersion blender, leaving a few chunky pieces for texture. Stir in the cream and simmer for another 5 minutes.
  6. Ladle the soup into bowls, garnish with fresh herbs, and serve with crusty bread.

Notes

Let the soup sit for a few hours or overnight for a deeper flavor. Adjust spice levels based on taste.
