Ingredients

- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1 teaspoon peppermint extract (or peppermint oil)
- Red food coloring
- White food coloring
Instructions
- Prepare your lollipop molds, preferably heart-shaped or holiday-themed.
- In a medium saucepan, combine the sugar, corn syrup, and water. Stir until fully combined and place on medium-high heat.
- Bring the mixture to a boil without stirring. Monitor the temperature with a candy thermometer until it reaches 300°F (hard crack stage).
- Remove from heat and allow to cool slightly before adding peppermint extract and food coloring. Stir gently.
- Quickly pour the hot candy into molds, inserting lollipop sticks before the candy hardens.
- Let cool for at least an hour or until hardened. Carefully remove from molds and package or display.
Notes
Using a heavy-bottomed saucepan helps prevent scorching. Use a candy thermometer for best results.
