- 1/2 cup granulated sugar
- 2 tart apples (e.g., Granny Smith), diced
- 1/2 cup caramel sauce
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 tsp cinnamon
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter and a bit of sugar. Press into mini muffin cups.
- In a separate bowl, beat cream cheese until smooth. Add sugar, eggs, vanilla extract, and cinnamon. Mix until creamy.
- Fold in diced apples.
- Spoon the filling into the crusts until three-quarters full.
- Bake for 18-20 minutes until set but still jiggly in the center.
- Allow to cool completely in the pan before drizzling with warm caramel sauce.
- Refrigerate for at least an hour before serving.
