A beloved family favorite, this Caramel Crème Brûlée features a silky custard with a crispy caramelized sugar crust, perfect for any occasion.
Ingredients

- 2 cups heavy cream
- 5 egg yolks
- 1/2 cup granulated sugar
- 1 vanilla bean or 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 325°F (160°C).
- Place ramekins in a baking dish for a water bath.
- In a saucepan, heat the cream until it simmers, then remove from heat.
- Whisk together egg yolks, sugar, and salt until pale and creamy.
- If using, split the vanilla bean and add the seeds to the cream; stir in the vanilla extract.
- Slowly pour the cream into the egg mixture while whisking to temper the yolks.
- Strain the mixture through a fine-mesh sieve into a jug.
- Fill the ramekins with custard.
- Pour hot water into the baking dish until halfway up the sides of the ramekins.
- Bake for 30-40 minutes until edges are set but center jiggles slightly.
- Cool at room temperature and refrigerate for at least 2 hours.
- Sprinkle sugar on top and use a kitchen torch to melt and caramelize the sugar.
- Allow the sugar to harden for a minute before serving.
Notes
For a lighter version, substitute half-and-half for heavy cream. Custom flavors can be added like bourbon or espresso powder.
