- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup soft caramel candies
- 1/4 cup sugar (for rolling)
- 2 tablespoons cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Whisk together flour, baking soda, and cinnamon, then combine with wet ingredients until just mixed.
- Press a piece of caramel into the center of each cookie ball and wrap the dough around it.
- Mix cinnamon and sugar for coating and roll cookie balls in this mixture.
- Bake cookies on a parchment-lined sheet for 10-12 minutes until edges are golden.
- Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
For a dairy-free version, substitute coconut oil for butter. Store cookies in an airtight container for up to a week.
