  • 3/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup soft caramel candies
  • 1/4 cup sugar (for rolling)
  • 2 tablespoons cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. Whisk together flour, baking soda, and cinnamon, then combine with wet ingredients until just mixed.
  5. Press a piece of caramel into the center of each cookie ball and wrap the dough around it.
  6. Mix cinnamon and sugar for coating and roll cookie balls in this mixture.
  7. Bake cookies on a parchment-lined sheet for 10-12 minutes until edges are golden.
  8. Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

For a dairy-free version, substitute coconut oil for butter. Store cookies in an airtight container for up to a week.
