  • 2 tablespoons Butter
  • Fresh thyme or parsley, chopped
  • 50g Parmesan cheese, grated or shaved
  • Salt and black pepper, to taste

Instructions

  1. Prepare the ingredients: Clean the leeks thoroughly and slice thinly. Clean and slice the mushrooms.
  2. Cook the pasta: In a pot of salted boiling water, cook the pasta according to package instructions until al dente.
  3. Sauté the leeks: In a large skillet, heat olive oil and butter over medium heat. Add leeks and sauté until translucent, allowing them to caramelize slowly.
  4. Add garlic and mushrooms: Once leeks are golden, add minced garlic and sliced mushrooms. Cook until mushrooms are softened and have released their water.
  5. Combine with pasta: Reserve a cup of pasta water and drain the rest. Add pasta to the skillet with leeks and mushrooms.
  6. Create the sauce: Pour in reserved pasta water. Add fresh herbs and Parmesan, stirring to combine.
  7. Final touches: Taste and adjust seasoning with salt and pepper as needed.
  8. Serve: Plate the pasta garnished with extra cheese and herbs, serve warm, and enjoy.
