- 2 large onions (yellow or sweet)
- 8 ounces cremini or button mushrooms

Instructions
- Prepare the Bread: Slice your French baguette into ½-inch thick slices. Arrange them on a baking sheet and drizzle a little olive oil over the top. Broil them in the oven for a minute or two until they’re golden brown and crisp.
- Caramelize the Onions: In a large skillet, heat a tablespoon of olive oil over medium heat. Slice your onions and add them to the skillet. Stir occasionally, allowing them to cook slowly for about 25-30 minutes until soft and golden brown. Add a pinch of salt to enhance sweetness.
- Sauté the Mushrooms: Once onions are caramelized, add another tablespoon of olive oil to the skillet. Toss in sliced mushrooms and minced garlic, cooking until tender and golden, usually around 10 minutes. Season with salt and pepper to taste.
- Combine and Finish: Mix sautéed mushrooms with caramelized onions, and stir in fresh herbs just before serving to maintain their flavors.
- Top the Crostini: Spoon generous amounts of the mushroom and onion mixture on each toasted baguette slice. Finish with an extra sprinkle of fresh herbs or balsamic reduction if desired.
- Serve and Enjoy: Arrange crostini on a platter for guests to enjoy!
