- 1 can (13.5 oz) coconut milk
- 2 tablespoons curry powder
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 small onion or shallot, chopped

- Juice of 1 fresh lime
- Fresh cilantro or parsley, for garnish
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- Optional: sautéed mushrooms or bell peppers
Instructions
- Prep the Ingredients: Measure out your coconut milk, chop aromatics, and have the salmon ready.
- Sauté the Aromatics: In a large skillet, heat oil over medium heat. Add garlic, ginger, and onion or shallots. Sauté for 2-3 minutes until fragrant.
- Add the Spices: Mix in curry powder, cumin, and turmeric. Toast for 1 minute.
- Pour in the Coconut Milk: Whisk in coconut milk and simmer gently for about 5 minutes.
- Cook the Salmon: Place salmon fillets in the sauce, cover, and cook for 8-10 minutes or until salmon flakes easily.
- Finish with Lime and Herbs: Add lime juice and garnish with herbs before serving.
- Serve and Enjoy: Serve over jasmine rice or alongside roasted vegetables.
Notes
Always taste your sauce before serving and adjust lime and salt to preference. For more heat, add red pepper flakes.
