Ingredients

Scale
  • 4 salmon fillets, skinless
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 small onion or shallot, chopped
  • 1 tablespoon oil for sautéing
  • Juice of 1 fresh lime
  • Fresh cilantro or parsley, for garnish
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • Optional: sautéed mushrooms or bell peppers

Instructions

  1. Prep the Ingredients: Measure out your coconut milk, chop aromatics, and have the salmon ready.
  2. Sauté the Aromatics: In a large skillet, heat oil over medium heat. Add garlic, ginger, and onion or shallots. Sauté for 2-3 minutes until fragrant.
  3. Add the Spices: Mix in curry powder, cumin, and turmeric. Toast for 1 minute.
  4. Pour in the Coconut Milk: Whisk in coconut milk and simmer gently for about 5 minutes.
  5. Cook the Salmon: Place salmon fillets in the sauce, cover, and cook for 8-10 minutes or until salmon flakes easily.
  6. Finish with Lime and Herbs: Add lime juice and garnish with herbs before serving.
  7. Serve and Enjoy: Serve over jasmine rice or alongside roasted vegetables.

Notes

Always taste your sauce before serving and adjust lime and salt to preference. For more heat, add red pepper flakes.
