- 3 cloves fresh garlic, minced
- 1 inch fresh ginger, minced
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 425°F (220°C).
- Chop your chosen vegetables into bite-sized pieces and toss them in olive oil, salt, and pepper.
- Combine gnocchi with tikka masala paste and cashew butter in a large bowl, ensuring every piece is coated.
- Spread the vegetable mixture and sauced gnocchi evenly across a large sheet pan.
- Roast for 20-25 minutes, stirring halfway through.
- Serve hot, drizzling with coconut milk or cream if desired, and garnish with fresh cilantro.
