- 8 oz fettuccine or linguine pasta
- 1 cup champagne or sparkling wine
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1 tbsp butter
- Salt and pepper, to taste
- Fresh herbs (parsley or chives) for garnish
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Reserve a cup of pasta water, then drain and set aside.
- Sauté the garlic and mushrooms: In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, then add sliced mushrooms and cook until browned.
- Deglaze with champagne: Pour champagne into the skillet and let it simmer while scraping the pan, reducing until it’s about half.
- Create the cream sauce: Lower the heat and stir in heavy cream, then add Parmesan, stirring until melted and silky.
- Combine pasta and sauce: Add the cooked pasta and toss until evenly coated. Adjust seasoning if needed.
- Serve and enjoy: Plate the pasta, sprinkle with more Parmesan, fresh herbs, and a drizzle of olive oil.
Notes
Don’t overcook the pasta; al dente is essential. Use freshly grated Parmesan for maximum flavor.
