  • 1 cup heavy cream

  • 8 oz cremini or button mushrooms, sliced
  • 1 tbsp butter
  • Salt and pepper, to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Reserve a cup of pasta water, then drain and set aside.
  2. Sauté the garlic and mushrooms: In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, then add sliced mushrooms and cook until browned.
  3. Deglaze with champagne: Pour champagne into the skillet and let it simmer while scraping the pan, reducing until it’s about half.
  4. Create the cream sauce: Lower the heat and stir in heavy cream, then add Parmesan, stirring until melted and silky.
  5. Combine pasta and sauce: Add the cooked pasta and toss until evenly coated. Adjust seasoning if needed.
  6. Serve and enjoy: Plate the pasta, sprinkle with more Parmesan, fresh herbs, and a drizzle of olive oil.
