Instructions
- Prepare the strawberries by washing them, removing the stems, and cutting them into quarters.
- Combine strawberries, sugar, and lemon juice in a large pot, letting it sit for 10-15 minutes.
- Cook the mixture over medium heat, stirring occasionally, until it begins to boil for about 10 minutes.
- Add champagne and pectin, then simmer for an additional 5-10 minutes until the mixture thickens.
- Test for doneness by placing a spoonful on a cold plate; it should hold its shape.
- Pour the hot jelly into sterilized jars, seal, and let cool for 24 hours.
Notes
Use fresh strawberries for the best flavor. Avoid overcooking the jelly to maintain a spreadable consistency.
