Description

A delightful and effervescent jelly made with fresh strawberries and champagne, perfect for celebrations and family gatherings.


Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 1 cup champagne (or sparkling wine)
  • 1 cup granulated sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 1 package fruit pectin

Instructions

  1. Start by washing and hulling the strawberries, removing the green tops and cutting them in halves or quarters. Place them in a large pot.
  2. Add the sugar and lemon juice to the pot with the strawberries, tossing gently to coat. Let it sit for about 10 minutes to release the juices.
  3. Pour in the champagne and mix well. Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally.
  4. Once boiling, add the pectin and stir continuously until it dissolves completely. Keep boiling for about 5-10 minutes until the mixture thickens slightly.
  5. To test the thickness, place a small spoonful on a cold plate. Let it sit for a minute, and then run your finger through it. If it holds its shape, that’s perfect!
  6. Remove from heat and skim off any foam. Pour the jelly into sterilized jars, leaving a little space at the top. Seal with lids and process them in a hot water bath for about 10 minutes for longer shelf life.
  7. Let the jars cool completely. Feel free to decorate them with pretty fabric and ribbons for an extra touch of love.

Notes

Make sure to maintain an even simmer after adding the pectin; too vigorous of a boil can alter the jelly’s texture. Test for consistency with the plate test.
