- 2 cups sharp cheddar cheese, grated
- 3 large eggs
- 1 cup heavy cream

Instructions
- Prepare your crust: If you’re making a homemade crust, mix flour, salt, and butter until crumbly. Add ice water until the dough comes together. Fit into a pie pan and pre-bake at 400°F (200°C) for about 10 minutes; set aside to cool.
- Sauté the onions: Add sliced onions to a skillet with butter over medium heat. Sauté until soft and golden brown, about 15-20 minutes.
- Make the filling: In a bowl, whisk together eggs, heavy cream, and season with salt and pepper. Stir in sautéed onions and grated cheddar until combined.
- Fill the crust: Pour the onion and cheese mixture into the pre-baked crust evenly.
- Bake: Return pie to the oven and bake at 375°F (190°C) for 30-35 minutes, until set and golden on top.
- Cool and serve: Allow the pie to cool for a few minutes before slicing for better serving.
