  • 1 chopped onion
  • 12 cups diced bell peppers
  • 2 cups fresh spinach
  • 12 cups shredded cheese (sharp cheddar or pepper jack)
  • Salt and pepper to taste
  • Biscuits (store-bought or homemade)
  • Fresh thyme or chives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 10-inch cast-iron skillet or oven-safe dish.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper until combined and airy.
  3. In a medium skillet, heat olive oil over medium heat. Sauté onion and bell peppers until softened, about 5-7 minutes. Add spinach and cook until wilted.
  4. Gently fold the sautéed mixture into the egg mixture. Break apart the biscuit dough into small pieces and fold them into the mixture along with the cheese.
  5. Pour the mixture into the prepared skillet, top with additional cheese if desired, and bake for 25-30 minutes until set and golden.
  6. Allow to cool for a few minutes before slicing and serving.
