- 6 large eggs
- ½ cup milk
- 1 tablespoon olive oil
- 1 chopped onion
- 1–2 cups diced bell peppers
- 2 cups fresh spinach
- 1–2 cups shredded cheese (sharp cheddar or pepper jack)
- Salt and pepper to taste
- Biscuits (store-bought or homemade)
- Fresh thyme or chives (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 10-inch cast-iron skillet or oven-safe dish.
- In a large bowl, whisk together eggs, milk, salt, and pepper until combined and airy.
- In a medium skillet, heat olive oil over medium heat. Sauté onion and bell peppers until softened, about 5-7 minutes. Add spinach and cook until wilted.
- Gently fold the sautéed mixture into the egg mixture. Break apart the biscuit dough into small pieces and fold them into the mixture along with the cheese.
- Pour the mixture into the prepared skillet, top with additional cheese if desired, and bake for 25-30 minutes until set and golden.
- Allow to cool for a few minutes before slicing and serving.
