- 1 lb lean ground beef
- 1 cup white or brown rice
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (bell peppers, corn, peas)
- Salt and pepper to taste
- Dried herbs (thyme, oregano) to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef with the diced onion and minced garlic for about 5-7 minutes.
- Stir in the rice and pour in the broth. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about 15 minutes.
- Once the rice is tender, mix in the vegetables, salt, pepper, and additional herbs.
- Transfer half of the mixture to a greased casserole dish. Layer with half of the cheese, add the remaining mixture, and top with the rest of the cheese.
- Cover with foil and bake for 25 minutes. Remove foil for the last 10 minutes to brown the cheese.
- Let cool for a few minutes before serving and garnish with fresh herbs if desired.
Notes
Feel free to use ground turkey or chicken as a healthier option. Brown rice may require longer cooking time.
