Description
A comforting and creamy soup made with russet potatoes, sharp cheddar cheese, and topped with crispy bacon and fresh herbs.

- 4 Russet potatoes, peeled and diced
- 1 cup sharp cheddar cheese, shredded
- 1 cup heavy cream
- 4 slices bacon, cooked and crumbled
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1/4 cup green onions, chopped (for garnish)
- 1/4 cup chives, chopped (for garnish)
- Salt and pepper to taste
- Optional: cayenne or paprika for warmth
Instructions
- Peel and dice the potatoes into uniform cubes.
- In a large pot, cook the crumbled bacon over medium heat until crispy. Remove and drain on paper towels, leaving the drippings in the pot.
- Add chopped onions and garlic to the pot with bacon drippings. Sauté for 3-4 minutes until onions are translucent.
- Stir in diced potatoes and pour in the broth. Season with salt and pepper. Bring to a boil, then reduce to a simmer for 15-20 minutes until potatoes are tender.
- Use a potato masher to mash some of the potatoes to create a chunky texture.
- Stir in the heavy cream gradually, then fold in shredded cheese until melted and smooth.
- Add the cooked bacon, green onions, and chives before serving. Adjust seasoning as needed.
- Ladle into bowls and serve warm, optionally with crusty bread.
Notes
For a vegetarian version, omit bacon and use vegetable broth. Instant potato flakes can also be used for quicker prep.
