Description

A comforting and creamy soup made with russet potatoes, sharp cheddar cheese, and topped with crispy bacon and fresh herbs.


Ingredients

  • 4 Russet potatoes, peeled and diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1/4 cup green onions, chopped (for garnish)
  • 1/4 cup chives, chopped (for garnish)
  • Salt and pepper to taste
  • Optional: cayenne or paprika for warmth

Instructions

  1. Peel and dice the potatoes into uniform cubes.
  2. In a large pot, cook the crumbled bacon over medium heat until crispy. Remove and drain on paper towels, leaving the drippings in the pot.
  3. Add chopped onions and garlic to the pot with bacon drippings. Sauté for 3-4 minutes until onions are translucent.
  4. Stir in diced potatoes and pour in the broth. Season with salt and pepper. Bring to a boil, then reduce to a simmer for 15-20 minutes until potatoes are tender.
  5. Use a potato masher to mash some of the potatoes to create a chunky texture.
  6. Stir in the heavy cream gradually, then fold in shredded cheese until melted and smooth.
  7. Add the cooked bacon, green onions, and chives before serving. Adjust seasoning as needed.
  8. Ladle into bowls and serve warm, optionally with crusty bread.

Notes

For a vegetarian version, omit bacon and use vegetable broth. Instant potato flakes can also be used for quicker prep.
