- 4 medium-sized russet or Yukon Gold potatoes, peeled and chopped
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1–2 cups shredded sharp cheddar cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt, to taste
- Flour tortillas
- Fresh cilantro, for garnish
Instructions
- Prep the potatoes: Start by peeling and chopping the potatoes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
- Sauté the aromatics: In a skillet, heat olive oil over medium heat. Sauté the diced onion until translucent, then add minced garlic. Cook until fragrant, about 30 seconds.
- Mash the potatoes: Drain the boiled potatoes and add them to the skillet. Use a potato masher to mash them with the sautéed onions and garlic. Mix in shredded cheese and season with cumin, chili powder, and salt.
- Fill the tortillas: Take a scoop of the potato mixture and place it in the center of each tortilla. Fold the sides in, then roll it up tightly.
- Cook the burritos: Heat a non-stick skillet over medium heat. Place the burrito seam-side down in the skillet and cook until golden brown and crispy, about 3-4 minutes, then flip.
- Serve: Slice the burritos in half and serve hot, garnished with fresh cilantro, sour cream, or salsa if desired.
