  • Flour tortillas

Instructions

  1. Prep the potatoes: Start by peeling and chopping the potatoes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
  2. Sauté the aromatics: In a skillet, heat olive oil over medium heat. Sauté the diced onion until translucent, then add minced garlic. Cook until fragrant, about 30 seconds.
  3. Mash the potatoes: Drain the boiled potatoes and add them to the skillet. Use a potato masher to mash them with the sautéed onions and garlic. Mix in shredded cheese and season with cumin, chili powder, and salt.
