Instructions
- Prepare the potatoes: Boil cubed potatoes in salted water for about 15-20 minutes until tender. Drain and mash until smooth, adding butter and a pinch of salt.
- Make the filling: Sauté diced onions and minced garlic in oil until golden. Mix with mashed potatoes and stir in shredded cheese until melted.
- Warm the tortillas: Heat each tortilla in a skillet for about 20 seconds on each side.
- Assemble the burritos: Place cheesy potato mixture on the lower third of the tortilla. Fold in the sides and roll tightly. Place seam-side down on a baking sheet.
- Bake or fry: Bake burritos at 375°F for 15-20 minutes until golden, or fry in oil until crispy.
- Serve and enjoy: Pair with sour cream, salsa, or guacamole, and garnish with fresh herbs.
Notes
For extra flavor, consider caramelizing the onions before mixing them with the mashed potatoes. Adjust filling to avoid sogginess.
