Description

Delicious Cherry Cheesecake Brownie Bars combining rich brownie and creamy cheesecake layers topped with tart cherries.


Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup unsalted butter
  • 8 oz cream cheese
  • 1 cup fresh or frozen cherries, pitted and chopped
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking dish with parchment paper.
  3. In a mixing bowl, melt the butter and stir in cocoa powder until smooth.
  4. Add granulated sugar and mix in eggs one at a time.
  5. Fold in flour and salt until just combined.
  6. In another bowl, beat cream cheese until smooth, then mix in sugar and vanilla.
  7. Fold in cherries gently.
  8. Pour half the brownie batter into the prepared dish, then spoon the cheesecake mixture over it.
  9. Top with the remaining brownie batter and swirl the two together.
  10. Bake for 35-40 minutes until edges are firm and center is slightly wobbly.
  11. Cool completely at room temperature, then refrigerate for at least 2 hours before cutting.

Notes

Ensure cream cheese is at room temperature for best blending. Don’t rush the cooling process for cleaner cuts.
