Delicious Cherry Cheesecake Brownie Bars combining rich brownie and creamy cheesecake layers topped with tart cherries.
Ingredients

- 1 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1 cup all-purpose flour
- 3 large eggs
- 1/2 cup unsalted butter
- 8 oz cream cheese
- 1 cup fresh or frozen cherries, pitted and chopped
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, melt the butter and stir in cocoa powder until smooth.
- Add granulated sugar and mix in eggs one at a time.
- Fold in flour and salt until just combined.
- In another bowl, beat cream cheese until smooth, then mix in sugar and vanilla.
- Fold in cherries gently.
- Pour half the brownie batter into the prepared dish, then spoon the cheesecake mixture over it.
- Top with the remaining brownie batter and swirl the two together.
- Bake for 35-40 minutes until edges are firm and center is slightly wobbly.
- Cool completely at room temperature, then refrigerate for at least 2 hours before cutting.
Notes
Ensure cream cheese is at room temperature for best blending. Don’t rush the cooling process for cleaner cuts.
