- 4 eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 cup fresh or canned cherries
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper and lightly grease it.
- In a bowl, beat the eggs and sugar until light and fluffy. Gently fold in the flour, baking powder, and vanilla until just combined.
- Spread the batter evenly onto the prepared baking sheet. Bake for about 12-15 minutes or until the cake springs back when lightly touched.
- Remove the cake from the oven and let it cool in the pan for about 5 minutes. Then, invert it onto a powdered sugar-dusted kitchen towel.
- Carefully peel off the parchment paper and roll the cake up with the towel from the short end. Let it cool completely in this rolled position.
- While the cake cools, whip the cream cheese until light and creamy. Gradually add in the powdered sugar and heavy cream, whipping until it forms soft peaks.
- Once the cake is cool, gently unroll it. Spread the cheesecake mixture over the cake, adding fresh cherries on top.
- Carefully roll the cake back into its original shape. Wrap it in plastic wrap and refrigerate for at least an hour to set.
- When ready to serve, dust with powdered sugar and slice. Enjoy!
Notes
For a lighter cake, consider using egg whites. You can swap cream cheese for mascarpone for a different flavor. Feel free to use strawberries or raspberries if cherries aren’t in season.
