Description

A delightful dessert that combines a light sponge cake with a creamy cheesecake filling and fresh cherries, making it a perfect treat for summer gatherings.


Ingredients

  • 4 eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 cup fresh or canned cherries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper and lightly grease it.
  3. In a bowl, beat the eggs and sugar until light and fluffy. Gently fold in the flour, baking powder, and vanilla until just combined.
  4. Spread the batter evenly onto the prepared baking sheet. Bake for about 12-15 minutes or until the cake springs back when lightly touched.
  5. Remove the cake from the oven and let it cool in the pan for about 5 minutes. Then, invert it onto a powdered sugar-dusted kitchen towel.
  6. Carefully peel off the parchment paper and roll the cake up with the towel from the short end. Let it cool completely in this rolled position.
  7. While the cake cools, whip the cream cheese until light and creamy. Gradually add in the powdered sugar and heavy cream, whipping until it forms soft peaks.
  8. Once the cake is cool, gently unroll it. Spread the cheesecake mixture over the cake, adding fresh cherries on top.
  9. Carefully roll the cake back into its original shape. Wrap it in plastic wrap and refrigerate for at least an hour to set.
  10. When ready to serve, dust with powdered sugar and slice. Enjoy!

Notes

For a lighter cake, consider using egg whites. You can swap cream cheese for mascarpone for a different flavor. Feel free to use strawberries or raspberries if cherries aren’t in season.
