- 4 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 cups fresh cherries, pitted and chopped
- 1 cup pistachios, chopped and toasted
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and bake for 10 minutes.
- In a large mixing bowl, beat together cream cheese and sugar until smooth. Incorporate eggs one at a time, then add sour cream and vanilla extract; blend until creamy.
- Gently fold in cherries and pistachios to ensure even distribution.
- Pour the cheesecake mixture over the crust. Bake for 50-60 minutes or until the center is slightly jiggly.
- Cool for an hour at room temperature, then chill in the refrigerator for at least 3 hours, preferably overnight.
- Before serving, top with cherry or pistachio garnish and enjoy!
