- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 eggs, beaten
- ½ cup sour cream
- 1 tsp vanilla extract
- 1.5 cups graham cracker crumbs
- ½ cup butter, melted
- 1 cup fresh cherries, pitted and chopped
- ½ cup roasted unsalted pistachios, chopped
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add beaten eggs, sour cream, and vanilla extract. Beat until fluffy.
- Gently fold in chopped cherries and pistachios.
- Pour cheesecake mixture over the crust. Bake for 50-60 minutes, until edges are set but center jiggles slightly.
- Turn off the oven, crack the door, and let the cheesecake cool inside for a while.
- Refrigerate for at least 4 hours, preferably overnight.
- Garnish with more cherries and pistachios before serving.
Notes
Use room temperature ingredients for a smooth filling. A water bath can prevent cracking during baking.
