Description

A delightful blend of creamy cheesecake, tart cherries, and crunchy pistachios, perfect for family gatherings and celebrations.


Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 eggs, beaten
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1.5 cups graham cracker crumbs
  • ½ cup butter, melted
  • 1 cup fresh cherries, pitted and chopped
  • ½ cup roasted unsalted pistachios, chopped

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add beaten eggs, sour cream, and vanilla extract. Beat until fluffy.
  4. Gently fold in chopped cherries and pistachios.
  5. Pour cheesecake mixture over the crust. Bake for 50-60 minutes, until edges are set but center jiggles slightly.
  6. Turn off the oven, crack the door, and let the cheesecake cool inside for a while.
  7. Refrigerate for at least 4 hours, preferably overnight.
  8. Garnish with more cherries and pistachios before serving.

Notes

Use room temperature ingredients for a smooth filling. A water bath can prevent cracking during baking.
