Deliciously chewy cookies made from ripe bananas and rolled oats, perfect for any time of day.

- 2–3 ripe bananas, mashed
- 1/3 cup melted butter or coconut oil
- 1 egg
- 1 tsp pure vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tsp baking soda
- A pinch of salt
- 1 tsp ground cinnamon (optional)
- Chocolate chips, nuts, or dried cranberries (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- Mash the bananas in a large mixing bowl until smooth.
- Mix in the melted butter or coconut oil, egg, and vanilla extract.
- In another bowl, combine the oats, flour, brown sugar, baking soda, and salt. Add cinnamon if using.
- Gradually add the dry mixture to the wet mixture, folding gently until combined.
- Add any desired mix-ins like chocolate chips or nuts.
- Scoop tablespoon-sized dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, until the edges are golden and the centers are set.
- Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Don’t skip the cooling step to ensure cookies firm up properly. Use ripe bananas for the best flavor.
