Description

A delightful dish featuring tender ground chicken infused with fragrant spices, served with a creamy garlic yogurt dip.


Ingredients

  • 1 lb ground chicken
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh herbs (mint, parsley, or cilantro)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 cup breadcrumbs or bulgur
  • 1 cup plain full-fat yogurt
  • 1 clove garlic for yogurt, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground chicken, finely chopped onion, garlic, herbs, spices, breadcrumbs or bulgur, salt, and pepper. Mix gently until just combined.
  2. Wet your hands slightly and form the mixture into oval-shaped patties or long sausages.
  3. Heat a non-stick skillet over medium-high heat and add a bit of oil.
  4. Cook the kofta for about 5-6 minutes on each side until golden brown and cooked through (internal temperature should be 165°F).
  5. While kofta is cooking, mix the yogurt with minced garlic and lemon juice. Season to taste with salt.
  6. Serve the kofta warm with garlic yogurt on the side, alongside fresh vegetables or pita.

Notes

Be gentle when mixing the kofta to avoid toughness. Ensure you season both the mixture and yogurt well.
