Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh mozzarella, sliced
  • 2 cups marinara sauce
  • 2 eggs, whisked
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish

Instructions

  1. Prepare the chicken: Preheat your oven to 375°F (190°C). Pound the chicken breasts gently with a meat mallet and season with salt and pepper.
  2. Set up the breading station: In one bowl, place whisked eggs, and in another, combine breadcrumbs with grated Parmesan, garlic powder, and dried oregano.
  3. Bread the chicken: Dip each chicken breast into the egg mixture, then transfer to the breadcrumb bowl, pressing the breadcrumbs onto the chicken.
  4. Brown the chicken: Heat olive oil in a large skillet over medium heat and cook the breaded chicken for about 3-4 minutes on each side until golden brown.
  5. Assemble the dish: Spread a layer of marinara sauce in a baking dish, place the browned chicken on top, add more marinara sauce over each piece, and top with mozzarella cheese.
  6. Bake: Place the dish in the preheated oven for about 25-30 minutes, or until the cheese is bubbling and golden.
  7. Let it rest: Allow the Chicken Parmigiana to sit for 5-10 minutes after baking.
  8. Garnish and serve: Sprinkle fresh basil on top before serving with garlic bread and a green salad.

Notes

For a vegetarian option, use zucchini slices instead of chicken. You can also use store-bought marinara for convenience.
