- 2 ripe pears (Bartlett or Bosc)
- 1 cup brie or goat cheese (or cheddar/mozzarella)
- 1 tablespoon fresh thyme or rosemary
- 2 cloves garlic, minced
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Slice a pocket into each chicken breast and season with salt and pepper.
- Melt olive oil or butter in a skillet, add garlic and sauté until fragrant (about 30 seconds).
- Stir in diced pears and herbs, cooking for 3-5 minutes.
- Add cheese to the skillet, mixing until melted and creamy.
- Stuff the chicken pockets with the pear and cheese mixture, securing with toothpicks if needed.
- Sear the chicken in the skillet for 3-4 minutes on each side until golden brown.
- Transfer to a greased baking dish and pour any leftover stuffing on top. Bake for 25-30 minutes or until internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before slicing and serve with balsamic glaze if desired.
