- 2 cups boneless chicken (breast or thighs), cooked and shredded
- 8 corn or flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can black beans, drained and rinsed
- 1 bell pepper, diced
- 1 onion, diced
- 1 packet taco seasoning
- 1 cup sour cream or Greek yogurt
- Fresh cilantro, chopped for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the chicken with taco seasoning in a skillet until no longer pink, about 6-8 minutes. Shred or chop into bite-sized pieces.
- Sauté diced onions and bell peppers in the same skillet for 5-7 minutes until soft.
- In a baking dish, layer tortillas, then half of the chicken, beans, half of the cheese, and sautéed vegetables. Repeat layering.
- Top the final layer with more tortillas and cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Drizzle sour cream on top and sprinkle with cilantro before serving.
Notes
Feel free to use rotisserie chicken for convenience, and customize with different veggies or cheeses based on preference.
