Description

A delicious Chicken Taco Casserole that brings warmth and flavor to the family table, featuring tender chicken, black beans, and a blend of spices topped with melted cheese.


Ingredients

  • 2 cups boneless chicken (breast or thighs), cooked and shredded
  • 8 corn or flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 packet taco seasoning
  • 1 cup sour cream or Greek yogurt
  • Fresh cilantro, chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chicken with taco seasoning in a skillet until no longer pink, about 6-8 minutes. Shred or chop into bite-sized pieces.
  3. Sauté diced onions and bell peppers in the same skillet for 5-7 minutes until soft.
  4. In a baking dish, layer tortillas, then half of the chicken, beans, half of the cheese, and sautéed vegetables. Repeat layering.
  5. Top the final layer with more tortillas and cheese.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Drizzle sour cream on top and sprinkle with cilantro before serving.

Notes

Feel free to use rotisserie chicken for convenience, and customize with different veggies or cheeses based on preference.
