Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 45 fresh scallions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons vegetable oil
  • Black pepper, to taste

Instructions

  1. Cut chicken into bite-sized pieces and place them in a bowl. Add 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, minced garlic, and grated ginger. Mix well and let it marinate for at least 15 minutes.
  2. In a hot skillet with a splash of oil, add the chopped scallions and sauté until soft. Remove and set aside.
  3. In the same skillet, add a bit more oil and introduce the marinated chicken. Cook until browned and cooked through, about 5-7 minutes.
  4. Return the sautéed scallions to the skillet, drizzle an additional tablespoon of soy sauce, and toss everything to combine.
  5. Serve hot over rice or noodles, garnished with extra scallions.

Notes

For a vegetarian version, substitute chicken with tofu or mushrooms. Serve with steamed vegetables for a complete meal.
