- 1 lb boneless, skinless chicken thighs or breasts
- 4–5 fresh scallions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tablespoons vegetable oil
- Black pepper, to taste
Instructions
- Cut chicken into bite-sized pieces and place them in a bowl. Add 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, minced garlic, and grated ginger. Mix well and let it marinate for at least 15 minutes.
- In a hot skillet with a splash of oil, add the chopped scallions and sauté until soft. Remove and set aside.
- In the same skillet, add a bit more oil and introduce the marinated chicken. Cook until browned and cooked through, about 5-7 minutes.
- Return the sautéed scallions to the skillet, drizzle an additional tablespoon of soy sauce, and toss everything to combine.
- Serve hot over rice or noodles, garnished with extra scallions.
Notes
For a vegetarian version, substitute chicken with tofu or mushrooms. Serve with steamed vegetables for a complete meal.
