- 1 Store-bought or homemade pie crust
- 8 oz Bittersweet chocolate, chopped
- 1 cup Heavy cream
- 1 cup Granulated sugar
- 2 tablespoons Unsalted butter
- 2 Egg yolks
- 1 teaspoon Vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Prepare the pie crust according to instructions, or press crushed cookies with butter into a pie dish and bake for 10 minutes until lightly golden. Let cool.
- In a medium saucepan, heat 1 cup of heavy cream until simmering. Stir in 8 oz of chopped bittersweet chocolate until melted and smooth. Whisk in 2 egg yolks and a dash of vanilla extract, then set aside to cool slightly.
- In another saucepan, combine 1 cup of granulated sugar over medium heat, stirring until it melts into an amber liquid. Carefully stir in ½ cup of heavy cream and 2 tablespoons of unsalted butter until smooth.
- Pour half of the chocolate mixture into the cooled pie crust, then add a layer of caramel, followed by the remaining chocolate. Chill the pie in the refrigerator for at least 4 hours or overnight.
- Slice and serve, garnished with whipped cream or a sprinkle of sea salt.
Notes
Always pay attention to the temperature of the chocolate and caramel to avoid burning. Allow ample chilling time for the layers to set properly.
