Ingredients

- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 tbsp sugar
- 1/4 tsp salt
- 1 cup milk (whole, almond, or oat)
- 1 egg
- 2 tbsp melted butter (or coconut oil)
- 1/2 cup chocolate chips (semi-sweet or dark)
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, whisk the milk, egg, and melted butter.
- Gradually pour the wet ingredients into the dry ingredients, stirring just until combined.
- Gently fold in the chocolate chips.
- Preheat a non-stick skillet over medium heat and brush with a little butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, about 2-3 minutes. Flip and cook for another minute until golden brown.
- Serve warm with maple syrup, powdered sugar, or fresh berries.
Notes
Let the batter rest for about five minutes before cooking for fluffier pancakes. Avoid overmixing the batter.
