Description

Ingredients

  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 cup milk (whole, almond, or oat)
  • 1 egg
  • 2 tbsp melted butter (or coconut oil)
  • 1/2 cup chocolate chips (semi-sweet or dark)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk the milk, egg, and melted butter.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring just until combined.
  4. Gently fold in the chocolate chips.
  5. Preheat a non-stick skillet over medium heat and brush with a little butter.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, about 2-3 minutes. Flip and cook for another minute until golden brown.
  7. Serve warm with maple syrup, powdered sugar, or fresh berries.

Notes

Let the batter rest for about five minutes before cooking for fluffier pancakes. Avoid overmixing the batter.
