- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1 cup semi-sweet chocolate chips
- 1 cup shelled pistachios, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing until well incorporated.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and chopped pistachios with a spatula.
- Scoop heaping amounts of dough onto the prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes or until the edges turn golden brown and the center remains slightly soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients and consider chilling the dough for 30 minutes before baking. Store cookies in an airtight container for up to a week.
