Ingredients

- 1 cup dark chocolate (high quality, 70% cocoa)
- ½ cup unsalted butter
- ½ cup granulated sugar
- 2 large eggs
- 2 tbsp all-purpose flour
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 425°F (220°C).
- Grease ramekins with butter and dust with flour or cocoa powder.
- Melt the chocolate and butter together in a double boiler or microwave, stir until smooth, and let cool slightly.
- In a mixing bowl, whisk together sugar and eggs until pale and thickened.
- Gradually mix in the melted chocolate mixture, then fold in the flour and vanilla.
- Pour the batter into the prepared ramekins, filling halfway.
- Bake for 12-14 minutes until edges are set but center is soft.
- Let them sit for a minute, then invert onto plates and serve while warm.
Notes
Refrigerate unbaked cakes and add 1-2 extra minutes to baking time when ready to bake.
