Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • Chocolate chips or chunks for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, and salt.
  3. In a mixing bowl, beat together the softened butter and sugars until light and fluffy.
  4. Incorporate the eggs one at a time, mixing well after each addition.
  5. Gradually add in the flour mixture, mixing until just combined.
  6. Roll the dough into balls about one inch in diameter and place them on a parchment-lined baking sheet.
  7. Press your thumb gently into the center of each ball to create an indent.
  8. Bake for 10-12 minutes, until the edges are set but the center remains soft.
  9. Deepen the thumbprint and fill with chocolate as soon as they come out of the oven.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

If the dough is too soft, refrigerate for 30 minutes to make it easier to handle.
