Description

A rich and velvety Chocolate Truffle Cake that captures the essence of decadent dark chocolate with a smooth ganache finish.


Ingredients

  • 8 oz dark chocolate (70% cacao or higher)
  • 1/2 cup unsalted butter
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the dark chocolate and butter together in a double boiler or microwave until smooth.
  3. Whisk eggs and sugar in a mixing bowl until light and fluffy.
  4. Mix in the melted chocolate mixture slowly with the egg and sugar blend.
  5. Sift together cocoa powder and flour, then fold into the chocolate mixture.
  6. Add vanilla extract and mix until just combined.
  7. Pour the batter into a greased round cake pan and bake for 25-30 minutes.
  8. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  9. To prepare ganache, heat heavy cream until just boiling and pour over dark chocolate, whisk until smooth.
  10. Once the cake cools, pour ganache over the top and let it drip down the sides.

Notes

Substitutions: Use coconut oil for dairy-free, applesauce for egg substitute, almond flour for gluten-free.
