A rich and velvety Chocolate Truffle Cake that captures the essence of decadent dark chocolate with a smooth ganache finish.

- 8 oz dark chocolate (70% cacao or higher)
- 1/2 cup unsalted butter
- 3 large eggs
- 1 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- 1 cup heavy cream (for ganache)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the dark chocolate and butter together in a double boiler or microwave until smooth.
- Whisk eggs and sugar in a mixing bowl until light and fluffy.
- Mix in the melted chocolate mixture slowly with the egg and sugar blend.
- Sift together cocoa powder and flour, then fold into the chocolate mixture.
- Add vanilla extract and mix until just combined.
- Pour the batter into a greased round cake pan and bake for 25-30 minutes.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
- To prepare ganache, heat heavy cream until just boiling and pour over dark chocolate, whisk until smooth.
- Once the cake cools, pour ganache over the top and let it drip down the sides.
Notes
Substitutions: Use coconut oil for dairy-free, applesauce for egg substitute, almond flour for gluten-free.
