Ingredients

- 8 oz high-quality chocolate (dark or semi-sweet)
- 1 cup sugar
- 1/2 cup butter
- 1/2 cup heavy cream
- 1/2 tsp sea salt
- 1 tsp vanilla extract
Instructions
- Melt the chocolate in a double boiler or microwave until smooth.
- Coat the insides of cupcake liners with a layer of chocolate and refrigerate for 15 minutes.
- In a saucepan, combine sugar and butter over medium heat until light golden, then add heavy cream, whisking until blended. Cook for an additional 5 minutes.
- Remove from heat and stir in vanilla extract and sea salt.
- Fill the chocolate cups with caramel, about three-quarters full.
- Top with another layer of melted chocolate to seal.
- Refrigerate for at least 30 minutes until set.

Ensure chocolate is tempered properly and use cooking-grade sea salt for best results.
