- ½ cup unsalted butter, softened
- 2 tsp baking powder
- 2 large eggs
- 2 tsp vanilla extract
- ½ cup powdered sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing after each addition, then incorporate vanilla.
- In another bowl, whisk together flour, baking powder, and a pinch of salt. Gradually mix the dry ingredients into the wet mixture until well combined.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least an hour.
- Form the dough into 1-inch balls and roll each in powdered sugar until fully coated. Place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until cookies have puffed up and crinkled, still slightly soft in the center.
- Let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a dairy-free version, replace butter with coconut oil. Consider chilling the dough for the best texture and to prevent spreading during baking.
