  • 1 cup unsalted butter
  • 68 tbsp cold water
  • 34 apples (mix of Granny Smith and Honeycrisp)
  • 1 ½ cups fresh or frozen cranberries
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • 2 tsp vanilla extract

Instructions

  1. In a mixing bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cold water until dough forms. Wrap in plastic wrap and refrigerate for at least an hour.
  2. Peel, core, and slice apples. Toss with cranberries, sugars, cinnamon, nutmeg, and vanilla in a bowl.
  3. Roll out half of the chilled dough into a circle and place in pie pan.
  4. Pour the fruit filling into the crust. Roll out the second half of the dough, cover the filling, and seal the edges.
  5. Preheat oven to 425°F (220°C) and bake for 15 minutes, then reduce temperature to 350°F (175°C) and bake an additional 35-40 minutes.
  6. Cool for 30 minutes before slicing and serving.
