Ingredients

  • 2 cups mixed dried fruits (raisins, currants, sultanas)
  • 1 cup stout or brandy
  • 1 cup breadcrumbs
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon allspice
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • Zest of 1 orange
  • Pinch of salt

Instructions

  1. Prepare your steamer by filling a large pot with water and bring it to a simmer.
  2. Mix the dried fruits with the stout or brandy and let them soak for at least an hour.
  3. Combine the breadcrumbs, sugar, spices, and orange zest in a separate bowl.
  4. Blend the soaked fruits and any remaining liquid into the dry mixture, then add in the eggs and melted butter.
  5. Transfer the mixture to a greased pudding basin lined with parchment paper.
  6. Steam the pudding for 6–8 hours, checking the water level occasionally.
  7. Cool the pudding, then store in the fridge for deepening flavors.
  8. Re-steam for one hour before serving, topped with brandy butter.

Notes

To serve, carefully ignite the brandy on top for a festive presentation. Ensure proper steaming to keep the pudding moist.
