A festive and traditional Christmas pudding served with a rich brandy butter that evokes nostalgia and warmth.
Ingredients

- 2 cups mixed dried fruits (raisins, currants, sultanas)
- 1 cup stout or brandy
- 1 cup breadcrumbs
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon allspice
- 1/2 cup unsalted butter, melted
- 2 large eggs
- Zest of 1 orange
- Pinch of salt
Instructions
- Prepare your steamer by filling a large pot with water and bring it to a simmer.
- Mix the dried fruits with the stout or brandy and let them soak for at least an hour.
- Combine the breadcrumbs, sugar, spices, and orange zest in a separate bowl.
- Blend the soaked fruits and any remaining liquid into the dry mixture, then add in the eggs and melted butter.
- Transfer the mixture to a greased pudding basin lined with parchment paper.
- Steam the pudding for 6–8 hours, checking the water level occasionally.
- Cool the pudding, then store in the fridge for deepening flavors.
- Re-steam for one hour before serving, topped with brandy butter.
Notes
To serve, carefully ignite the brandy on top for a festive presentation. Ensure proper steaming to keep the pudding moist.
