- 1 Beef Roast (ribeye or chuck)
- 1 cup Red Wine (Cabernet Sauvignon or Merlot)
- 1 Onion, chopped
- 4 cloves Garlic, minced
- 2 cups Beef Broth
- 2 tbsp Butter
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- Fresh Thyme and Rosemary, to taste
Instructions
- Prepare the beef by bringing it to room temperature. Pat it dry and season with salt and pepper.
- Sear the roast in a skillet with olive oil until golden brown on all sides.
- Sauté onions and garlic in the same skillet until translucent.
- Deglaze the skillet with red wine, scraping the bottom to release flavorful bits.
- Add beef broth and herbs, stirring to combine. Return roast to the pot.
- Cover and roast in a preheated oven at 325°F (165°C) for 2 to 2.5 hours.
- Make the gravy by straining the cooking juices and simmering until thickened.
- Slice the roast against the grain and serve with the gravy.
Notes
Let the roast rest for 15-20 minutes before slicing for best results. Searing adds depth of flavor essential for a perfect roast.
