Ingredients

  • 1 Beef Roast (ribeye or chuck)
  • 1 cup Red Wine (Cabernet Sauvignon or Merlot)
  • 1 Onion, chopped
  • 4 cloves Garlic, minced
  • 2 cups Beef Broth
  • 2 tbsp Butter
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • Fresh Thyme and Rosemary, to taste

Instructions

  1. Prepare the beef by bringing it to room temperature. Pat it dry and season with salt and pepper.
  2. Sear the roast in a skillet with olive oil until golden brown on all sides.
  3. Sauté onions and garlic in the same skillet until translucent.
  4. Deglaze the skillet with red wine, scraping the bottom to release flavorful bits.
  5. Add beef broth and herbs, stirring to combine. Return roast to the pot.
  6. Cover and roast in a preheated oven at 325°F (165°C) for 2 to 2.5 hours.
  7. Make the gravy by straining the cooking juices and simmering until thickened.
  8. Slice the roast against the grain and serve with the gravy.

Notes

Let the roast rest for 15-20 minutes before slicing for best results. Searing adds depth of flavor essential for a perfect roast.
