Ingredients

  • 1 ¾ cups powdered sugar
  • 3 large egg whites, at room temperature
  • ¼ cup granulated sugar
  • 4 oz cream cheese (or butter)
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • Holiday spices (like nutmeg and cinnamon)

Instructions

  1. Prepare your baking sheets: Line your baking sheets with parchment paper, or use a silicone mat.
  2. Sift the almond flour and powdered sugar for a smooth macaron shell.
  3. Whip the egg whites on medium speed until foamy. Gradually add granulated sugar and continue until stiff peaks form.
  4. Fold the dry ingredients into the egg whites using the ‘macaronage’ technique until the mixture flows like lava.
  5. Pipe small circles onto the prepared sheets, leaving space in between each.
  6. Let them rest for at least 30 minutes until they form a skin.
  7. Bake at 300°F (150°C) for about 15-20 minutes.
  8. Prepare the filling by whipping cream cheese or butter with flavoring and sugar.
  9. Assemble the macarons by pairing similar-sized shells and piping filling between them.
  10. Decorate with white chocolate drizzle, green sprinkles, or edible glitter.
