  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp coffee or espresso powder (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the eggs and sugar together until pale and fluffy.
  3. Fold in the sifted dry ingredients gently to maintain airiness.
  4. Mix in the melted butter and vanilla extract until combined, then pour the batter into the prepared baking sheet.
  5. Bake for 12-15 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool slightly before rolling it up in parchment dusted with powdered sugar.
  7. Whip the heavy cream with powdered sugar until stiff peaks form, then fold in coffee powder if using.
  8. Unroll the cooled cake, spread the filling evenly, and roll it back up.
  9. Frost the outside with ganache and decorate with powdered sugar and seasonal fruits.

Notes

For a healthier option, substitute applesauce for butter or use ricotta for the filling.
