Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat the eggs and sugar together until pale and fluffy.
- Fold in the sifted dry ingredients gently to maintain airiness.
- Mix in the melted butter and vanilla extract until combined, then pour the batter into the prepared baking sheet.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Allow the cake to cool slightly before rolling it up in parchment dusted with powdered sugar.
- Whip the heavy cream with powdered sugar until stiff peaks form, then fold in coffee powder if using.
- Unroll the cooled cake, spread the filling evenly, and roll it back up.
- Frost the outside with ganache and decorate with powdered sugar and seasonal fruits.
