  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar (for the cinnamon swirl)
  • 1 tsp cinnamon (for the cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar. Beat in the egg and vanilla extract until well combined.
  3. Gradually mix in the all-purpose flour, baking powder, and cinnamon until a dough forms.
  4. In another bowl, blend the cream cheese and a bit of sugar until smooth, adding extra vanilla if desired.
  5. Mix together brown sugar and cinnamon in a small bowl for the cinnamon swirl.
  6. Scoop tablespoons of dough, flatten each, add a dollop of cheesecake filling, sprinkle with cinnamon sugar, and top with another scoop of dough, pinching the edges to seal.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Cool on the baking sheet for a few minutes before transferring to a cooling rack.
