- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- 1/4 cup brown sugar (for the cinnamon swirl)
- 1 tsp cinnamon (for the cinnamon swirl)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar. Beat in the egg and vanilla extract until well combined.
- Gradually mix in the all-purpose flour, baking powder, and cinnamon until a dough forms.
- In another bowl, blend the cream cheese and a bit of sugar until smooth, adding extra vanilla if desired.
- Mix together brown sugar and cinnamon in a small bowl for the cinnamon swirl.
- Scoop tablespoons of dough, flatten each, add a dollop of cheesecake filling, sprinkle with cinnamon sugar, and top with another scoop of dough, pinching the edges to seal.
- Bake for 12-15 minutes or until the edges are golden brown.
- Cool on the baking sheet for a few minutes before transferring to a cooling rack.

Ensure all ingredients are at room temperature. Chill the dough for 30 minutes for better shaping.
